Potato Soup, Anyone????


Hello all!!!! I have a favor to ask.....

I need a good recipe for potato soup. I know it's easy. I know someone out there has a good recipe to share. I have never even tried to make it. I have a basic idea in my head, but I need someone's help. For some reason, I've been on a soup kick here lately. I think it's nice in the winter to sit down with a hot bowl of soup, a blanket, and maybe a weiner dog or two cuddled next to me. I'm craving some good potato soup, so help me out here!!!!!

I know A.S. has an easy potato soup recipe, but I don't remember what it is.

I think mom made potato soup one time...Maybe a couple of times. But it might've come from a package...I forget. I'll have to ask her! =)

I have attempted to make p. soup before and it didn't turn out so great. I would hit up A. Sissy for her recipe, I'm sure it's pretty good. Be sure to add shredded cheese and bacon on top. Yumo!

On Paula Deen's show tonight, she made potato soup with shrimp.

Here's the recipe:

Potato Soup with Shrimp Recipe courtesy Paula Deen


1/2 stick butter
1 small onion, diced
2 medium carrots, diced about the same size as the onion
2 tablespoons all-purpose flour
8 medium russet potatoes, peeled and cubed
4 cups milk, whole, reduced fat (2 percent) or low fat (1 percent)
2 chicken bouillon cubes, dissolved in 1/2 cup hot milk
1 cup half-and-half
1 teaspoon salt
1/4 teaspoon pepper
2 cups salted water
1 pound medium shrimp

Crumbled bacon bits, for garnish
Grated sharp Cheddar, for garnish
Dill sprigs, optional garnish

In a 4-quart saucepan, melt the butter and saute the onion and carrots until both are slightly tender, about 5 minutes. Whisk in the flour and cook for 1 minute.

Add the potatoes, milk, and dissolved bouillon cubes. Cook over medium heat for 15 minutes, until the potatoes are very soft and some of them have begun to dissolve into mush.

Add the half-and-half, salt, and pepper.

In a small saucepan, bring 2 cups lightly salted water to a boil. Add the shrimp all at once and stir well. Watch the shrimp closely; as soon as they all turn pink, about 2 to 3 minutes, turn off the heat and drain.

The shrimp should be slightly undercooked. When they are cool, peel them, and chop roughly into big chunks. Add the shrimp to the soup and stir well.

Serve soup sprinkled with bacon bits and grated cheese. Garnish with dill sprigs, if desired.

Cook's Note: If you don't have access to shrimp, use corn.

Here's one I found in one of my books.

This potato soup with sausage is similar to the Olive Garden's famous Toscana soup.

INGREDIENTS:
3 links sweet Italian sausage

2 medium baking potatoes, cut in half lengthwise

2 to 3 slices bacon, diced

3/4 cup onions, diced

1 medium to large clove garlic, minced

2 cups escarole, chopped, or kale, cut in half, then sliced

2 tablespoons chicken base

4 cups water

1/2 cup whipping cream

PREPARATION:
Remove sausage from casings; brown in a skillet, breaking up, until cooked through.

Place onions and bacon in a large saucepan and cook over medium heat until onions are tender.

Add garlic and cook 1 minute longer. Add chicken base, water and potatoes, simmer 15 minutes.

Add sausage, kale and cream.

Simmer 4 minutes and serve.

Serves 5.


I haven't tried it myself but it sound good. I use "Tastefully Simple" Potato Soup, You can add anything you want to it. It's really good, the girls and B like it. You can go to their web site at www.tastefullysimple.com they have othe good stuff as well.

Sissy sent me hers, and I've got a few other options now thanks to everyone. Even my Mom chippped in and gave me her recipe, so I'll let you all now how it tunrs out.
